Best Ever Potato Salad

Best Ever Potato Salad is delicious warm or cold! With only 6 ingredients, it is quick and easy to prepare.

With the warm days now, a cold side dish is welcome. Whether it is a simple supper, a family get together or a picnic, Best Ever Potato Salad will be a hit.

My Mom is known for her potato salad and asked to bring it to gatherings of all kinds. This is based on her recipe. She adds relish and uses Miracle Whip instead of mayonnaise (affiliate link). I often use a mix of 3/4 mayonnaise (affiliate link) and 1/4 Miracle Whip or 2/3 mayonnaise and 1/3 Miracle Whip if we want more “zing”.

Chopped onions or dill pickles are also delicious in it. It depends on what we are eating it with. The last ingredient is “chopped onions, celery, relish or chopped dill pickles” so you can add whatever your family prefers. Feel free to add more than one option!

mayonnaise

mustard (affiliate link)

white wine vinegar

minced onions, celery, relish or chopped dill pickles, optional

Directions:

Wash and boil potatoes until fork pushes through easily.

Dice eggs. I put the peeled eggs in the bowl first and chop them up with a pastry cutter.

Skin and dice potatoes and add to bowl. The potatoes are so easy to peel by just sliding a sharp knife over the skin after they are cooked.

Add mayonnaise, mustard (affiliate link) and vinegar.

Add 1/3 cup minced onions, relish or chopped pickles if desired.

Mix all together.

Best Ever Potato Salad mixed together

I sometimes do about ¾ mayo and ¼ Miracle Whip or 2/3 mayo and 1/3 MW if you like it a little more zingy.

Garnish with sliced egg pieces on top.

Sprinkle with parsley (affiliate link) and paprika (affiliate link) if desired.

Ingredients

  • 6 medium-large potatoes
  • 4 hard boiled eggs
  • 2 cups mayonnaise
  • 3 Tablespoons mustard
  • 1 Tablespoon white wine vinegar
  • 1/3 cup minced onions, celery, relish or chopped dill pickles, optional
  • Parsley and paprika for garnish

Instructions

  1. Wash and boil potatoes until fork pushes through easily.
  2. Dice eggs. I put the peeled eggs in the bowl first and chop them up with a pastry cutter.

  4. Add mayonnaise, mustard and vinegar.
