When my family wants meatloaf, this Best Gluten Free Low Carb Meatloaf is the one I want to make! It is not only delicious, but easy for the cook!
With only 4 ingredients—ok, there is salt (affiliate link) and pepper (affiliate link) too but they hardly count—it is a snap to make this. Pull those things out, mix them up, shape them into loaves and bake. That is it!
We will shape them into 4 small loaves so that they cook faster and so they are easy to serve. They are also a great size for meal prep or for the freezer that way.

Keto Mashed Cauliflower Much Like Potatoes (GF and LC)

Creamy Spinach Cheese Bake (GF and LC)
Roasted Parmesan Asparagus (GF and LC)
This is our favorite meatloaf and the one I make the most often. It is pictured here with Oven Roasted Vegetables (GF and LC), Sweet Potatoes cooked in the Slow Cooker (GF) and Twice Baked Potato Casserole (GF).
Can This Be Frozen?
These meatloaves freeze very well before or after cooking.
If freezing before cooking, thaw before cooking.
Freeze up to 3 months tightly wrapped.
Do not thaw raw meat and refreeze without cooking first.
How to Store the cooked Meatloaf
Store in the refrigerator in an airtight container for up to 5 days. Or freeze for up to 3 months.

ground beef—a mix of ground meats or any ground meat is fine
eggs–large
pepper
salt
spaghetti sauce—homemade or bought; your choice
shredded mozzarella cheese—it is always best to shred your own cheese but bagged, preshredded is just fine too.
How to Make Best Gluten Free Low Carb Meatloaf
Add all but ¼ cup of sauce together in a bowl.
Combine well but don’t overmix.
Shape into 4 meatloaves.
Spray baking dish.
Lay meatloaves in baking dish so they are evenly spaced apart.
Top with remaining ¼ cup of sauce.
Bake, uncovered, in preheated 400* oven for 45 minutes or until the internal temperature is 160*.

- 2 large eggs
- ½ teaspoon pepper
- 1 teaspoon salt
- ½ cup spaghetti sauce, divided
- 1 cup shredded mozzarella cheese
Instructions
Add all but ¼ cup of sauce together in a bowl.
Combine well but don’t overmix.
Shape into 4 meatloaves.
