Broccoli Salad is a popular addition to picnics, potlucks and holiday tables. Being able to make it ahead of time makes it also popular with the cook!
This Broccoli Salad is my personal favorite recipe to take to any picnic or gathering or to just make and enjoy at home. I just plain love this stuff!
The crispy and crunchy vegetables and bacon and creamy dressing and cheese are a wonderful combination. The salty bacon and touch of green onion add just the right finish. Mmm! I really could make a meal out of this. Well, I have!
When I started eating Low Carb, I was delighted to realize that this recipe was naturally low carb. All that needed to be adapted was the sweetener and since I don’t add that anyway, I was set! That is the easiest thing to modify.

The Sweetener
This recipe calls for just a little bit of optional sweetener. Many people like a bit of sugar added. The beauty of this recipe is that you can add what you like or none at all. I don’t add any. If you add sugar, that is fine. If you like some swerve or stevia, that will work just fine too.

Can it Be Made Ahead of Time
The broccoli salad could be made a day ahead of time but keep the bacon separate. If the bacon sits in the dressing for more than a few hours, it will not be crispy any longer. It still tastes good but the crispiness is lost.
You can cook it ahead and keep it in a Ziplock bag.
Can This Be Frozen
No. With the mayonnaise and the fresh, raw vegetables, freezing is not recommended.
How to Store Broccoli Salad
Store broccoli salad covered tightly in the refrigerator for up to 5 days. If the dressing separates from the vegetables slightly, just mix it up again.
The Bacon
1/3 cup crumbled crisp bacon is 4-5 slices
Cooking bacon in the microwave is so easy for this recipe. It is ready in a few minutes with no mess.

Ingredients for dressing:
sour cream (or plain yogurt)
white vinegar

How to Make Broccoli Casserole

1-Mix salad ingredients together.
2-Mix dressing ingredients together.
3-Add salad and dressing ingredients to the same bowl.
4-Gently stir all together.
Serve.

Ingredients
- 4 cups broccoli, cut into bite sized pieces
- ¼ cup diced red bell pepper (any color but red is pretty)
- ½ cup shredded cheddar cheese
- 1/3 cup cooked, crumbled, crisp bacon
- 1/8 cup chopped green onion
- ½ cup mayonnaise
- ½ cup sour cream (or plain yogurt)
- 1 Tbsp white vinegar
- 1-2 Tbsp of sweetener of choice, optional
Instructions
Mix salad ingredients together.
Mix dressing ingredients together.
Add salad and dressing ingredients to the same bowl.
Gently stir all together.
Chill.
Serve.
Makes about 6 ½ cups of broccoli salad
