I made this Chocolate Covered Cherry Fudge for the first time for a recent Christmas. And wow, was it a HIT! This stuff is amazing!
The cherry fudge is already delicious. You could definitely just eat that. But add the chocolate covering and it is next level fantastic!
This will absolutely be part of our special candy on our Christmas tray from now on!

Can it Be Made Ahead of Time
Yes, it sure can! It will wait patiently in the refrigerator or in the freezer.
Can This Be Frozen
Yes! Fudge freezes well.
Just put it in an airtight container; some plastic wrap around it inside for extra protection is great, and put it in the freezer.
I have frozen it for a few weeks ahead and it tastes fresh for the holidays and when we had leftovers, I have frozen it for even a few months after.
How to Store Chocolate Covered Cherry Fudge
Store covered in the refrigerator for up to 2 weeks.

How to Make Chocolate Covered Cherry Fudge
For the Fudge

Line an 8×8 pan with foil.
Cut cherries in quarters.
1-Rinse and wipe dry with paper towels.
2-Melt white chips in microwave safe bowl on high for 1 minute.
Sitr.
Melt for 30 seconds more.
3-Stir well until smooth.
4-Add frosting to bowl.
Stir chips and frosting together until smooth.

5-Stir cherries into fudge.
6-Spread into pan.
7-Refrigerate about 1 hour or until set.
Lift fudge from pan by edges of foil and remove foil.
8-Cut into quarters, then 4×4.
Yield 64 pieces

For the Chocolate Coating

1-Melt chocolate and coconut oil in a microwave safe bowl half at a time.
Heat for 1 minute.
2-Stir until smooth.

3-5 Dip fudge pieces into melted chocolate, using two forks.
6-Place on parchment paper lined baking sheet to harden.
7-8 Sprinkle with red sugar. (Do this right away; it will harden quickly.)
Store in refrigerator.
Freeze up to 3 months.

- 11 ounce bag white baking chips
- 16 ounce cherry frosting
- 1 cup maraschino cherries
- 4 cups chocolate chips
- 3 Tablespoons coconut oil
Instructions
Line an 8x8 pan with foil.
Cut cherries in quarters.
Rinse and wipe dry with paper towels.
Melt white chips in microwave safe bowl on high for 1 minute.
Stir.
Melt for 30 seconds more.
Stir well until smooth.
Add frosting to bowl.
Stir chips and frosting together until smooth.
Stir cherries into fudge.
Spread into pan.
Refrigerate about 1 hour or until set.
Lift fudge from pan by edges of foil and remove foil.
