Slow Cooker Garlic Herb Chicken is one of my go-to meals.
It is tender and tastes great but my favorite thing about it is that I can just pour and sprinkle a few things over top, cover and return several hours later to a wonderful scent and the main part of dinner ready.
It just doesn’t get any easier than that!
Ok, I guess I could order out or buy something already made but for home cooking, it doesn’t get any easier. And we really do prefer home cooking.
There is nothing difficult or time consuming about preparing this meal.

This chicken is delicious on its own but if you want to really step it up a notch, make up some Easy Homemade Alfredo Sauce to pour over it. Oh my! If you have picky kids, they will eat this up! Literally! 🙂
Add leftover chicken to a salad or sandwich for lunch the rest of the week.
It is easy to make plenty to have meat to add to things later and freezes well too.
Ingredients:

boneless skinless chicken breasts
extra virgin olive oil
Instructions:
Add chicken to greased crock pot, pour olive oil, lemon juice and minced garlic over and sprinkle Italian seasoning to taste.
Cover and cook on high 5 hours or low 8 hours.
This is delicious as leftovers for lunch the next day or on a sandwich or salad.

- 2 pounds boneless skinless chicken breasts (4-5 medium pieces)
- ¼ cup extra virgin olive oil
- ¼ cup lemon juice
- 1 Tablespoon minced garlic
- to taste Italian seasoning
Instructions
- Add chicken to greased crock pot.
