This Easy Potato Beef and Corn Casserole is a recipe I keep in mind when I seem to forget that we like to eat every single night. Sometimes dinnertime just sneaks up on you, ya know?

With mostly pantry ingredients, it is something that I can whip up very quickly.

If you have cooked ground beef in your freezer like I usually do, it is even easier.

Shamefully easy, really.

Can it Be Made Ahead of Time?

This casserole is a great meal prep recipe because it is at least as good warmed up the next day. Warm up a serving a couple of minutes in the microwave.

The best tip for making the whole casserole ahead of time for the main meal would be to have the meat cooked beforehand. That can be cooked even months ahead and ready in the freezer to pop out, thawed for a few minutes in the microwave and ready to go into the casserole at prep time.

The meat could also be cooked a day or two ahead and stored in the refrigerator until you assemble the casserole.

Store leftovers covered in the refrigerator for up to 5 days.

dried minced onion

cans diced potatoes, drained

can whole kernel can, drained

can cream of chicken soup

shredded cheddar cheese

How to Make Easy Potato Beef and Corn Casserole

Preheat oven to 400*.

Cook ground beef with onion.

Drain well.

Drain potatoes and corn.

Mix all but cheese together.

Add to greased 2 quart baking pan (about 7×11)

Sprinkle cheese over top.

This Easy Potato Beef and Corn Casserole is quick and easy to assemble with only 6 ingredients but a tasty dish that the whole family will love!

Ingredients

  • 1 pound ground beef
  • 2 Tablespoons dried, minced onion
  • 2 15 ounce cans diced potatoes, drained
  • 1 15.25 can whole kernel can, drained
  • 1 10.5 ounce can cream of chicken soup
  • 1 ½ cups shredded cheddar cheese

Instructions

Preheat oven to 400*.
Cook ground beef with onion.
Drain well.
Mix all but cheese together.
Add to greased 2 quart, (about 7x11) baking dish.
Sprinkle cheese over top.
Bake uncovered 20 minutes.

Notes

I use the dried, minced onion as a shortcut. If you would like to cut a fresh onion, use about ½ cup chopped onion.
