These Groundhog Day Shadow Cupcakes are so much fun to make! Prepare them ahead of time to take to a party or have the kids decorate them.
They can be made as two groundhogs with one seeing his shadow and one not. Or wait until the big day and let the kids watch to see if there are six weeks of spring left and decorate accordingly! Add just a groundhog or a groundhog and his shadow.

The Cupcakes:
You can totally use any cupcakes and any flavor you like. I just used a Betty Crocker cake mix and baked the cupcakes according to the instructions on the box.
The Frosting:
I just used a bought frosting but if you make one that you like, that is fine. White frosting colored green to look like grass is ideal but if you would rather avoid food coloring, you could use chocolate frosting to look like dirt. Maybe use honey (affiliate link) or cinnamon bears so they show up better.
The Groundhogs:
So yes, we are using Teddy Grahams for the groundhogs and they are technically bears but just roll with it, OK? 😊 They don’t make Groundhog Grahams and the ones with their little arms down do look a lot like groundhogs. I made these for a bunch of children and believe me, they were a hit. They loved them!
Can Groundhog Day Shadow Cupcakes be made ahead?
The cupcakes can be made ahead and they can be frosted. You can add the Teddy Grahams up to a couple of hours before you are ready to eat them but don’t do it too far ahead. They will lose their crunch and get soft after several hours because they absorb the moisture of the frosting.
Ingredients:
1 box Betty Crocker chocolate cake mix
1 Betty Crocker 16 oz cream cheese frosting
green food coloring
chocolate Teddy Grahams
Instructions:
Prepare the cupcakes as directed on the box or if you have a homemade recipe, that is fine too. Any flavor is fine and any brand of box mix is fine.
Frost the cupcakes. Again, use any flavor you like.
Use green food coloring to color white frosting like grass.
Place 2 Teddy Grahams side by side on the cupcake, leaving room for 1 to be placed face down in front of one of them for him to be seeing his shadow. One will see his shadow and one won’t.
You could also just frost the cupcakes and watch to see if the real groundhog actually sees his shadow and then allow the children to decorate the cupcakes accordingly. Have them decorate with 1 Teddy Graham standing with no shadow or 1 Teddy Graham standing and a shadow face down in front of him.
Notes: If you prefer not to use artificial colors, a chocolate frosting would be like dirt. You could use lighter colored Teddy Grahams like cinnamon or honey (affiliate link) flavored for the groundhogs.
