Low Carb Slow Cooker Chili is so delicious you will not even miss the beans! A favorite comfort food made low carb and with the ease of the Slow Cooker. It is also gluten, soy and dairy free and Paleo.
I ate Low Carb Slow Cooker (affiliate link) Chili for lunch today and thought, “This has GOT to be the next thing I post!”
It was so good and really hit the spot on a cold, blustery day.
The first night that family arrived for our Christmas, I made chili. I made my regular chili recipe for “them” but also made a low carb version for me.
I did not miss the regular stuff AT ALL.
This was delicious and hearty with the mushrooms in it and some shredded cheddar cheese on top. Yummy!
It is even better warmed up later and it freezes well for make ahead or freezer meals.
It can also be cooked on the stovetop. Just add everything to a saucepan and simmer gently for at least an hour.
I don’t know what more I could want in a recipe!

Ingredients:

cooked and drained ground beef
diced fresh mushrooms
chopped green pepper (affiliate link)
chopped onion
crushed tomatoes with juice
beef broth
chili powder
pepper (affiliate link)
salt (affiliate link)
garlic powder (affiliate link)
Directions:
Add everything to a greased slow cooker (affiliate link).
Stir.
Cover and cook on low for 8-10 hours or high 4-6 hours.
Serve with shredded cheese and sour cream if desired.

- 1 pound cooked and drained ground beef
- 2 cups diced fresh mushrooms (or more)
- ½ cup chopped green pepper
- ½ cup chopped onion
- 28 ounce can crushed tomatoes with juice
- 1 cup beef broth
- 1 Tablespoon chili powder or more to taste
- ½ teaspoon pepper
- 1 teaspoon salt
- ½ teaspoon garlic powder
Instructions

This looks delicious! Here in Texas we typically don’t do beans in our chili, so no loss here. I plan on fixing a big pot of this tonight with some pork rinds on the side. (I still miss the crunch of corn chips and tortilla chips)

Hi Robbie, I have not added it to this recipe yet. I am in the process of going back and adding it to all of my recipes but it takes a lot of time! 🙁 In the meantime, apps like My Fitness Pal will do it for you for free and you can add the exact brands you used to be the most accurate. I hope that helps for now.
