This Make Ahead Mashed Potato Casserole is our favorite Special Mashed Potatoes made into a make ahead version and in a casserole. And we thought we loved it before!

This potato casserole is so perfect for a holiday meal. I have made it for Thanksgiving and Christmas so far and it is wonderful to have it ready to slide into the oven with the other casseroles!

It is so nice too that is serves a crowd!

Can These Be Frozen

It is not recommended to freeze these. Potatoes change in consistency that is not desirable to most people. That said, it doesn’t spoil them to freeze it. If you don’t mind that, go for it.

How to Store Leftover Make Ahead Mashed Potato Casserole

If you have leftovers, store in an airtight container in the refrigerator for up to 5 days.

The Bacon

Cook the bacon however you prefer. I like to cook it in the microwave. See How To Cook Bacon in the Microwave.

I almost always use freshly cooked bacon but have sometimes used precooked bacon from a bag. It worked just fine too. Hormel Real Crumbled Bacon is a great choice. Use about 1 cup.

Potatoes

Butter

Sour cream

Cream cheese

Mozzarella cheese

Cheddar cheese

Green onion

Bacon, optional

How to Make Make Ahead Mashed Potato Casserole

Peel potatoes and cut into 1 inch chunks.

1-Place potatoes in a large pot and cover with water a few inches over the potatoes.

Bring to a boil over high heat then reduce to medium low so they are simmering well.

Let them simmer for 15-20 minutes until they are very soft.

Poke with a fork to test.

2-Drain.

3-Return the potatoes to the pot and add the butter, sour cream and cream cheese.

Mash very well so all the clumps are gone. Use a manual potato masher or a mixer; whatever you prefer.

Spray 9×13 baking dish.

4-5 Spread mashed potatoes into dish.

6-Sprinkle with cheeses.

7-Sprinkle with crumbled bacon if desired. I have done half.

Cover and refrigerate for up to 3 days.

Remove from refrigerator 1-2 hours before baking.

Preheat oven to 400*.

Bake, covered with foil, for 30 minutes.

8-Remove foil and bake another 20 minutes.

Sprinkle with green onions.

Ingredients

  • 5 pounds potatoes
  • 8 ounces butter
  • 16 ounces sour cream
  • 8 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onion
  • ½ cup cooked, crumbled bacon, optional

Instructions

Notes

If baking right after assembling, it won’t be chilled through so only bake 20 minutes covered plus 10 minutes uncovered.

This can easily be halved to serve 10 people. Put it in a 7x11 dish and bake 20 minutes covered plus 10 minutes uncovered.
