These Norwegian Cookies are a wonderful holiday cookie but don’t only make then then! Change out the colored sugar for any holiday or to make any day pretty!
The sugar topping gives these cookies a nice crunch, the finely chopped nuts give them a satisfying bite and the almond extract gives them a unique flavor. It is all a fantastic combination!

Can it Be Made Ahead of Time
Yes, they sure can! They will wait patiently in the refrigerator or in the freezer.
Can This Be Frozen
Yes! These cookies freeze well.
Just put them in an airtight container with parchment paper between layers; some plastic wrap over them inside for extra protection, and put them in the freezer.
I have frozen them for a few weeks ahead and they taste fresh for the holidays and when we had leftovers, I have frozen them for even a few months after.
Try one while it is still frozen! Yum!
How to Store Norwegian Cookies
Store in an airtight container in a cool place. They don’t have to be refrigerated unless it is very hot.
I’m allergic to nuts or don’t like them; can I leave them out?
The nuts are a major part of this cookie so it is not recommended to leave them out. If you are unable to eat the nuts, it would be best to find another cookie recipe that doesn’t use them.
Vintage PA Dutch Sand Tarts would be a good choice.

Sugar
Eggs
Vanilla extract
Walnuts; finely chopped
Colored sugar; green and red for Christmas or different colors for other holidays
How to Make Norwegian Cookies

1-Add butter and sugar to mixing bowl.
2-Cream together butter and sugar.
3-Add eggs and extracts.
4-Beat until light and fluffy.

5-Add in flour and chopped nuts.
6-Beat just until moistened.
7-Cover and chill in refrigerator for 1 hour or firm enough to handle. (Overnight is fine too.)
8-9 Shape dough into 1 inch balls and place 2 inches apart on greased or parchment lined baking sheets.

10-Spray the bottom of the glass with cooking spray the first time if needed.

11-16 Flatten to ¼ inch thickness with a sturdy glass dipped in colored sugar. Do this a couple of times if needed to get the cookie well coated in sugar.
Don’t make your cookies too thin unless you want crispy cookies.
Bake in a preheated 300* oven for 15 minutes.
Cool on pan for 3-5 minutes before moving to wire rack to complete cooling.
