These Triple Chocolate Truffle Cookies have been on my “to make” list for Christmas for decades. Even when the list is cut down, they are still on there!
How about a cookie made with 3 kinds of chocolate and then chocolate chips added too? Oh, yes!
I love that I can make these ahead and freeze them until I need them. They are a wonderful addition to cookie trays or holiday gifts. I have made these for decades.

Can it Be Made Ahead of Time?
Yes, they sure can! They will wait patiently in the refrigerator or in the freezer.
Can These Be Frozen?
Yes! These cookies freeze well.
Just put them in an airtight container with parchment paper between layers; some plastic wrap over them inside for extra protection, and put them in the freezer.
I have frozen them for a few weeks ahead and they taste fresh for the holidays and when we had leftovers, I have frozen them for even a few months after.
How to Store Triple Chocolate Truffle Cookies
Store in an airtight container in a cool place. They don’t have to be refrigerated unless it is very hot.

Unsweetened chocolate
Semisweet chocolate chips
Butter
Sugar
Eggs
Vanilla extract
Baking cocoa
Semisweet chocolate chips
Confectioners powdered sugar
How to Make Triple Chocolate Truffle Cookies

1-Add chocolate squares, 1 cup of chocolate chips and butter to a microwave safe bowl.
Melt for 45 seconds.
Stir well.
Microwave another 45 seconds if needed. Chocolate burns easily so watch 2-carefully. Stir well again.
3-Add sugar and eggs to mixing bowl.
Beat for 2 minutes.
4-Add vanilla and chocolate to mixture. Beat well.

5-Combine flour, cocoa, baking soda and salt in a small bowl.
6-Beat into chocolate mixture.
7-Stir in remaining chips
8-Cover and chill for at least 3 hours. Overnight is fine.

9-Remove about 1 cup of dough.
10-11 With floured hands, roll into 1 inch balls.
Use 2 spoons if it is too goopy.
12-Place on parchment paper lined baking sheets.
Bake in a preheated 350* oven for 12 minutes or until set.

13-14 Cool on the baking sheets for 3-4 minutes before removing to wire racks to cool completely.
15-16 Dust with confectioners sugar.

Ingredients
- 4 squares (1 ounce each) unsweetened chocolate
- 1 cup semisweet chocolate chips
- 1/3 cup butter
- 1 cup white sugar
- 3 eggs
- 1 ½ teaspoon vanilla extract
- ½ cup flour
- 2 Tablespoons baking cocoa
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup semisweet chocolate chips
- Confectioners powdered sugar
Instructions
