A quick and simple recipe for delicious easy banana muffins. 6 ingredients, Freezable and a perfect meal prep recipe.

I have made Easy Banana Muffins for over 30 years and they are good every time.  

Easy Banana Muffins are the perfect way to use bananas that didn’t get eaten as fast as I thought they would. They also make a great gift for teachers, neighbors or anyone.  

They freeze well so I can make some ahead when I know I will want some to pull out to eat later.

Sometimes I add chocolate chips or any kind of nut for a change. No matter how I make them, we always enjoy these muffins!

Can it Be Made Ahead of Time?

Yes!

Make ahead and freeze (see next section).

Or add dry ingredients to a Ziploc bag so all you need to do is add the banana and egg when you are ready to bake. That just makes it even easier.

Can This Be Frozen?

Yes, they freeze great!

I just put them in a Ziploc bag and freeze.

How to Store Easy Banana Muffins

Store in an airtight container or Ziploc bag.

They can be stored on the counter or at room temperature for a couple of days or in the refrigerator for up to 5 days.

Freeze up to 3 months.

Substitutions and Additions

Sometimes I substitute half of the white flour for either whole wheat or multi grain.

Sometimes I add walnuts and sometimes I just make plain muffins.

We also like chocolate chips, peanut butter chips or a mix of both.

How to Make Easy Banana Muffins

Mash bananas well.

Mix bananas and eggs.

Add dry ingredients.

Mix all together well. It will be thick.

If adding nuts or chips, add now and mix into batter.

Grease muffin pan.

Use 1/3 measuring cup to scoop into muffin pan.

Should fill 12 muffins cups pretty full.

Bake at 350* for 23 minutes or until toothpick inserted into middle of largest muffin comes out clean.

A quick and simple recipe for delicious easy banana muffins. 6 ingredients, Freezable and a perfect meal prep recipe.

Ingredients

  • 3 medium ripe bananas (about 1 very full cup)
  • 2 large eggs
  • 2 cups all purpose white flour
  • ¾ cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

Mash bananas well.
Mix bananas and eggs.
Add dry ingredients.
Mix all together well.
If adding nuts or chips, add now and mix into batter.
Grease muffin pan.
Use 1/3 measuring cup to scoop into muffin pan.
Should fill 12 muffins cups pretty full.
Bake at 350* for 23 minutes or until toothpick inserted into middle of largest muffin comes out clean.
Cool on wire rack.

Notes

Add up to 1 cup of the optional add-ins. If you do so, you will get a couple more than 12 muffins in your batch.

3 medium ripe bananas are about one full cup. If your bananas are just a bit more than that, it is fine. Just don’t go too far over.

How much you mash your bananas is up to you too. If you enjoy little chunks of banana in your muffins, don’t mash them totally smooth.

Optional add-ins; ½- 1 cup chopped walnuts or pecans, chocolate or peanut butter chips, raisins or a mixture of your preference.
