This Easy Taco Casserole is creamy, filling and will be a new family favorite! It has only 6 ingredients and is ready in less than an hour.

This delicious, easy taco casserole has been carried with us to potlucks, taken to folks who needed a meal and been served to company at our table. It is simple enough that I even made it with ten 7-10 year olds in a cooking class. Everyone loves this dish!

This is a recipe that has been used in our family for over two decades and I have given out the recipe many, many times.  Now I am happy to share it with you!

Tip for the taco meat:

If you make your taco meat ahead of time, you will have your meal ready put together even faster. If I am going to pull out my skillet, take time to cook meat and then wash it, I might as well get 5 meals out of it as 1, right? And If I can wash something once instead of 5 times, you can bet that is the route I will take. It doesn’t take too much more time to cook 5 pounds of meat as 1 pound so when I cook meat, I cook as much as I can and then split it up into freezer containers for meals so they are easy to use later. It is so nice to have that made up ahead of time to pull out when needed. 

I can actually pull meat out of the freezer as I gather the other ingredients. I can thaw it in the microwave for a minute and a half and it is ready to go. Shew! That saves me from the, “Oh no, it almost dinner time? What are we having?!” scare!! 

Need an easy recipe for homemade taco seasoning?

I have a taco seasoning recipe if you need it. I love to have some made up in the cabinet. It is cheaper than store bought but it is so much better for us too. It has no fillers and no MSG that gives me a headache. This takes only 7 herbs and spices from my cabinets and combining them into one jar; so simple! And it makes enough for 7 pounds of meat.

What to serve with Easy Taco Casserole:

I sure do appreciate recipes like this that can be on the table in less than an hour of deciding what to have for dinner.  You simply need any cooked green vegetable or a side salad to complete the meal. A crusty bread would be good too if you have it.

My favorite thing to have with Easy Taco Casserole is home canned green beans. It is the perfect pairing for taste and the beans are so quick to pop open and heat on the stove while the casserole is in the oven. It is almost always what we have with it.

Does Easy Taco Casserole Reheat and Freeze well?

Yes, it reheats wonderfully and also freezes well. If I want enough to freeze, I will make two pans because we always want enough left to have some for lunches. We think it is even better the next day.

Ingredients:

shell macaroni, cooked and drained

pasta boiling

cream cheese, cubed

sour cream

taco meat

tomato sauce

shredded cheddar cheese, divided

Directions:

Spray 9 X 13 casserole pan.

Stir cream cheese and sour cream into hot, drained pasta until well mixed.

Spread into pan.

Sprinkle with half of cheese.

Combine meat and tomato sauce.

Pour evenly over pasta.

Easy Taco Casserole without cheese

Bake uncovered at 350 for 25 minutes.

Sprinkle with remaining cheese.

Bake 5-10 minutes longer.

Easy Taco Casserole: This easy, creamy, filling taco casserole will be a new family favorite! It has only 7 ingredients and is ready in less than an hour.

Ingredients

  • 1 pound shell macaroni, cooked and drained
  • 8 oz. cream cheese, cubed
  • 8 oz. sour cream
  • 1 pound taco meat
  • 30 oz. tomato sauce
  • 16 oz. shredded cheddar cheese, divided

Instructions

Spray 9 X 13 casserole pan.

Stir cream cheese and sour cream into hot, drained pasta
until well mixed.

Spread into pan.

Sprinkle with half of cheese.

Combine meat and tomato sauce.

Pour evenly over pasta.

Bake uncovered at 350 for 25 minutes.

Sprinkle with remaining cheese.

Bake 5-10 minutes longer.
