Egg Sausage Potato Casserole is often part of our Christmas Day breakfast. It is a hearty, one dish meal that is easy to stir up and cooks while I do other things.
It is also great for meal prep because it is wonderful leftover–if there is any leftover. My gang can eat some of this casserole, let me tell you! 😊 If you want it for meal prep, I recommend planning that out for its own time and not counting on leftovers.
When we have it for Christmas breakfast or another special time, I serve it with a sweet casserole like Overnight French Toast and some fruit. That makes a wonderful meal.
You can use any meat; sausage, bacon, ham, etc. The pre-cut, frozen potatoes make it so easy and if you cook the meat ahead it is a dump, stir and bake meal.

Sausage Shortcut
I use precooked sausage that I had in my freezer. When I need to cook one pound, I cook several and put the rest away to make another recipe easy. Instead of getting the pan out, cooking, and cleaning up several times, I do it just once. This is a lifesaver tip and one I have used for many years.
Can it Be Made Ahead of Time?
Oh yes! This a great meal prep recipe! Warm a single serving size in the microwave for about 60 seconds and it will be ready for breakfast or snack!
Can This Be Frozen?
Egg based casseroles and muffins freeze fine. The consistency will be a little different. Some mind this and some don’t. You will have to experiment to see if you are one that minds or not. That will decide if you freeze them.
Any time I am not sure it will work or we will like it, I just freeze a small single portion or one muffin. Let it be frozen a week or so and then pull it out and try it. That is the only way to tell.
It does seem to help if they are not frozen for too long; like a month or less.
How to Store Egg Sausage Potato Casserole
Just store in an airtight container or wrap tightly with plastic wrap on a plate. If I am needing it to go with me, it will be packed into a container. If I know we will want it for a grab at home breakfast, I put a portion on a plate and wrap it in plastic so it is ready to uncover and microwave. (Replace the plastic with a paper towel in the microwave.)

large eggs
milk—dairy or non dairy; I have used 2%, whole, almond and soy milk successfully. You don’t want sweetened, vanilla or anything flavored of course.
cooked sausage—cooked and drained; see my note above on having some done ahead in the freezer
O’Brien potatoes–thawed
shredded cheddar cheese—any kind of cheese is fine if you want a variety
dried dill weed—fresh is even better if you have it; use about 3x as much fresh as dried
How to Make Egg Sausage Potato Casserole
Preheat oven to 350*.
Add eggs to a large mixing bowl and scramble them.
Add the rest of the ingredients.
Stir well.
Pour into 2 greased 2 quart baking pans (about 7×11 each).
Bake uncovered for 45-50 minutes or until a toothpick inserted in the center comes out dry.
Serve.

Ingredients
- 18 large eggs
- 1 ½ cups milk
- 1 pound cooked sausage
- 1 28 ounce bag O’Brien potatoes, thawed
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon dried dill weed
Instructions
- Preheat oven to 350*.
- Add eggs to a large mixing bowl and scramble them.
- Add the rest of the ingredients.
- Stir well.
- Pour into 2 greased 2 quart baking pans (about 7x11 each).
- Bake uncovered for 45-50 minutes or until a toothpick inserted in the center comes out dry.
Notes
You could also bake them in muffin pans with 1/4 cup in each for 20-25 minutes.
This makes two 7X11 dishes and it is perfect. I have tried it in a 9X13 and it fits but is difficult to cook through in the middle.
If you don’t have a 7X11 dish, just use 2 or 3 cake pans or any smaller dish. If you use more than 2, just lessen the cooking time, as it will cook faster in a smaller dish.
