My grandmother made this Baked Pineapple Casserole, handed the recipe down to my mother and she to me. It has been a family favorite at holidays and special occasions for decades!
It is a definitely don’t do without recipe for ham dinners and often present at turkey dinners too.
Since it is so easy to make, it is not one that the cook minds having on the menu.
When your family tastes this, they will want you to add it to your regular menu too!

Can it Be Made Ahead of Time?
I don’t recommend assembling the whole casserole ahead of time. It doesn’t take long to do the couple of steps.
If you really need to save last minute prep time, toast the bread in the butter about an hour ahead of time.
How to Store Baked Pineapple Casserole
Store leftovers covered with plastic wrap or in an airtight container in the refrigerator for up to 5 days.

eggs
white sugar
flour-white flour
white bread
butter
How to Make Baked Pineapple Casserole
Grease a 2 quart baking dish (affiliate link). (This is about 7×11”)
Cut bread into cubes.
Melt butter in pan over medium heat.
Brown bread in butter over medium heat.
Mix together pineapple (don’t drain), eggs, sugar and flour.
Pour pineapple mixture into baking dish.
Spread browned bread cubes over top.
Bake uncovered in preheated 350* oven for 30 minutes.
Serve and enjoy.

Ingredients
- 20 ounce can crushed pineapple
- 2 eggs
- ½ cup white sugar
- 2 Tablespoons flour
- 5 slices white bread
- ¼ cup butter
Instructions
Grease a 2 quart baking dish. (This is about 7x11”)
Cut bread into cubes.
Melt butter in pan over medium heat.
Brown bread in butter over medium heat.
Mix together pineapple (don’t drain), eggs, sugar and flour.
Pour pineapple mixture into baking dish.
Spread browned bread cubes over top.
Bake uncovered in preheated 350* oven for 30 minutes.

Double for a 9x13 baking dish and use the same cooking temperature and time.
