Beefy Lentil Soup is one of my go to recipes. I can’t even guess how many times I have made this recipe over the years. It is one of those old faithful ones.
My Aunt Hannah made this for us when we visited her many years ago and gave me the recipe. Since then it is one that I make for my family, company and when a friend needs a meal. It is easy to make and one that everyone loves. I have given the recipe out many times too. Now I am happy to share it with you! 😊
I also have a low carb version that I often make at the same time; beefy cabbage soup. It is the same thing without the lentils or carrots; still delicious.

Can Beefy Lentil Soup be made Ahead?
Oh yes! This is one of my favorite make-ahead recipes! I will often make a double batch to can some up for the pantry.
Freeze, leaving some head room at the top so the container can expand. Freeze in individual portions or family portions.
Freezing is great but it has to be thawed and if it is canned, it can be grabbed off the shelf and is ready to go. My youngest works in the hospital and enjoys having pint cans in his locker so he can pop off the lid and warm these in the microwave for his lunch in the middle of the night. Pressure can at 10 lbs. pressure; quarts 90 minutes and pints for 75 minutes.
Ingredients:
ground beef
chopped onion (or dried onion)
beef bouillon cubes
tomato juice
water
sliced carrots
chopped cabbage (about ½ head)
diced green pepper (affiliate link)
dried lentils, rinsed
Instructions:
Brown beef and onion together. Add salt (affiliate link) to taste.
If you want a great, easy to wash skillet to brown your beef in, I use this one: I use mine often and can get several pounds of meat in it at a time. It is a great time saver! I love it!
Rinse lentils. Do this right before dumping them into the pot. If you let them sit very long, they can get glumpy.
Add everything to a large saucepan.
Stir well and simmer for 30 minutes to 1 1/2 hours, depending on how thin your vegetables are diced.
Serve.

- 2 beef bouillon cubes
- 1 46oz. can tomato juice
- 4 cups water
- 1 cup sliced carrots (or 1 can)
- 3 cups chopped cabbage (about ½ head)
- ½ cup diced green pepper
- 1 cup dried lentils, rinsed
Instructions
