When I need something quick and delicious to do with zucchini, this Cheesy Zucchini Coins recipe is one I reach for! Actually, it is so easy, you hardly need a recipe!
We all need a stash of easy recipes and this will now be one of yours!
These crispy on the outside, soft and creamy on the inside, cheesy bites will be a family favorite. If you need a new way to eat zucchini or squash, this is it!

Can I Use a different kind of squash?
Yes! Yellow squash will work just as well. Follow the exact same directions.
Can I Use a Different Kind of Cheese?
Yes! Use any cheese you like! We like cheddar cheese at least as much as parmesan. Monterey Jack would be awesome too!

No, this won’t freeze well.
How to Store Cheesy Zucchini Coins
Store leftovers in an airtight container for up to 3 days.

Zucchini
Garlic salt (affiliate link)
Parmesan cheese
Black pepper (affiliate link), optional
How to Make Cheesy Zucchini Coins
Cut zucchini into ¼ inch slices.
Place zucchini coins on parchment lined baking sheet (affiliate link).
One zucchini should fit just right on one sheet.
If you don’t have parchment paper (affiliate link), you could also line a tray with aluminum foil and spray it well.
Sprinkle each zucchini coin with a little bit of garlic salt (affiliate link).
Spoon a small amount of cheese onto each zucchini coin.
Place baking tray into preheated 425* oven.
Bake for 15-20 minutes.
Check after 15 minutes.
You want the zucchini coins to be crispy and slightly browned but they burn easily so watch carefully after 15 minutes.
Serve immediately.

- ¼ teaspoon garlic salt
- ½ cup finely grated parmesan cheese
- Black pepper, optional
Instructions
