Eggs are so healthy!

Eggs are truly a super food. They are one of the most nutritious foods, containing vitamins A, D, E, K, B vitamins, folate, Selenium, calcium and zinc. (Healthline has an article with 9 health benefits of eating eggs.) 

Truly, eating eggs is a good thing. Finding lots of ways to eat them is a great thing!

We can eat them for breakfast, snacks, lunch and dinner! We can eat them for special occasions as appetizers, at brunches, picnics, cookouts and for holidays. They are so versatile and delicious!

The history of deviled eggs;

Since I was doing a whole post on deviled eggs, I wondered how long they have been around. Did you know that in Ancient Rome they hard boiled eggs and seasoned them in spicy sauces when entertaining?

The term “deviled” means spicy. I sure didn’t know that!

In 1896, the Fannie Farmer cookbook was the first to suggest using mayonnaise (affiliate link) as “glue” to hold the yolk filling together but it wasn’t until the 1940’s that it really became popular.

What else are deviled eggs called?

Deviled eggs can also be called stuffed eggs, salad eggs, or dressed eggs. My neighbor calls them angel eggs but I have not heard anyone else call them that. What else have you heard them called?

Ingredients:

Red Beet Eggs

mayonnaise (affiliate link)

spicy brown mustard (affiliate link)

vinegar from red beet eggs

Dash of pepper (affiliate link)

Parsley (affiliate link) for garnish

Directions:

Slice eggs in half length wise.

Remove yolks and put into bowl.

Mash yolks.

Next, add mayonnaise, mustard (affiliate link), vinegar and pepper (affiliate link) to yolks and mix well. (I forgot to mash the yolks first; it didn’t matter.)

Scoop yolk mixture back into egg white halves.

Lastly, garnish with parsley (affiliate link).

Add some of the beets from the jar too if you want.

Yield; 12 egg halves

Deviled Red Beet Eggs; Eggs that are Deviled and Pickled! The Best of Eggs! Perfect for Snacking, Appetizers, Picnics, Brunches or Cookouts!

Ingredients

  • 6 Red Beet Eggs
  • 4 Tablespoons mayonnaise
  • 2 teaspoons spicy brown mustard
  • 1 teaspoons vinegar from red beet eggs
  • Dash of pepper
  • Parsley for garnish

Instructions

  1. Slice eggs in half length wise.
  2. Remove yolks and put into bowl.
  3. Mash yolks.
  4. Next, add mayonnaise, mustard, vinegar and pepper to yolks and mix well.
  5. Scoop yolk mixture back into egg white halves.
  6. Lastly, garnish with parsley.
  7. Yield; 12 egg halves

  1. They look delicious. I make hard boiled eggs and put them in the jar with left over juice from beets and/or pickles. You have to check if the jar has sugar 1st though.

    1. Hi Linda! Yes, definitely check for sugar but great idea! I have put HB eggs in pickle juice too and they are delicious! 🙂 It is a quick, easy way to make tasty eggs!
